The Tnine Ourika Souk is an authentic weekly market where residents of the valley and surrounding villages gather. It's a vibrant place where you can buy and sell everything you need for daily life: fresh, locally grown fruits and vegetables, fragrant spices, quality meats, aromatic herbs, traditional utensils, and much more. Unlike tourist souks, this one retains its authenticity and popular atmosphere, offering a genuine immersion into local Berber life.

Auberge Le Maquis, run by Saida Khoukhi, is a true haven of peace in the heart of the valley. This family-run inn embodies traditional Berber hospitality while offering modern comforts. For riads located in the medina and difficult to reach by car, an easily accessible meeting point will be provided. The drive to the Ourika Valley takes approximately 45 minutes and already offers stunning views. You will gradually leave the urban bustle behind to discover increasingly lush and mountainous landscapes. Your guide will share the history of the valley, its Berber traditions, and provide insights into local life. This gentle transition prepares you for the immersive experience that awaits.

  • Discovering the Tnine Ourika Souk

First stop: the Souk Tnine Ourika, a vibrant weekly market brimming with authenticity. Accompanied by your guide and the chef, you'll wander through the colorful alleys of the souk, a true microcosm of Berber daily life. You'll observe merchants haggling with customers, stalls overflowing with freshly harvested vegetables, pyramids of brightly colored spices, butchers displaying their meats, and herbalists offering medicinal plants and aromatic herbs. The chef will teach you how to select the finest products: how to recognize perfectly ripe tomatoes, choose the ideal onions, assess the freshness of meat, and identify quality spices. You'll actively participate in the shopping, discovering the art of Moroccan bargaining and creating genuine interactions with local merchants.

  • Arrival at the Auberge Le Maquis

After shopping at the souk, head to Auberge Le Maquis, located at kilometer 45 on the Ourika road. Upon arrival, you'll be greeted by the peaceful, verdant atmosphere of this enchanting place. The inn, surrounded by lush gardens filled with fruit trees, flowers, and aromatic plants, offers spectacular views of the Atlas Mountains. You can admire the sparkling swimming pool, the shaded terraces, and the traditional Berber architecture of the establishment. Saida Khoukhi, the owner, will give you a warm welcome and show you around. This is a moment to relax, enjoy a welcome tea, and soak in the serenity of the surroundings before beginning the cooking workshop.

  • Cooking Workshop: Preparing the Berber Tajine

Now it's time for the cooking workshop! In the inn's traditional kitchen, or outdoors depending on the weather, the local chef will guide you through preparing an authentic Berber tagine. You'll start by preparing the ingredients: slicing the onions, chopping the vegetables, and preparing the meat (lamb, chicken, or beef, depending on the day's recipe). The chef will teach you the secrets of cooking in a tagine: arranging the ingredients in the conical dish, gradually adding the spices (cumin, ginger, saffron, paprika, coriander), using the right amount of olive oil and water, and the importance of slow cooking over low heat, which allows the flavors to blend harmoniously. You'll also discover how to prepare traditional side dishes: homemade bread, fresh Moroccan salad, and marinated olives. The chef will share his personal tips, common mistakes to avoid, and regional variations of this iconic dish.

  • Tasting in the Garden or by the Pool

After about an hour of gentle cooking, your tagine is ready! The table will be set in the inn's beautiful garden or on the poolside terrace, depending on your preference and the weather. You'll enjoy the fruits of your labor in an idyllic setting: the steaming tagine placed in the center of the table, accompanied by warm bread, fresh salads, and olives. The chef will explain the traditional way to eat the tagine: directly from the dish with bread, according to Berber custom. A traditional mint tea will conclude this meal in true Moroccan style.

In the late afternoon, you'll begin your journey back to Marrakech, your mind and heart filled with unforgettable memories. The return trip will allow you to admire the landscapes in a different light, often golden at the end of the day, and to contemplate the Atlas Mountains one last time. Your guide will answer any remaining questions and offer tips for recreating the tagine at home. You'll be dropped off at your hotel or riad, bringing to a close a day rich in culinary, cultural, and human discoveries. You'll leave not only with a new culinary skill but also with a deeper understanding of Berber culture and precious memories of this nature-filled escape.
